Winemakers Notes
This pure and granite textured Chenin Blanc is made from gently-pressed fruit sourced from a very singular vineyard block, Limestone Ridge at our Vista Verde Vineyard in the Central Coast. A long and gradual fermentation with a Loire isolated yeast strain took place in a unique concrete egg-shaped tank and stainless steel for over 60 days at an average of 46F. This long slow fermentation preserved the freshness, life and sense of place of this unique Chenin Blanc vineyard site. Aged sur lie in concrete and neutral oak barrels with frequent batonnage, this completely dry wine developed a round and porcelain-like texture. The pure Chenin Blanc and limestone characters shine through with essences of wet slate, quince and Kaffir limes. This is an elegant and intricate wine, pairing brilliantly with Dungeness crab, fresh oysters or grilled halibut, but still refreshing and delicate even on its own. An age-worthy wine, we recommend drinking now through 2018.
